Redefining Vietnamese dishes with vegan patties

Fresh spring rolls are one of the most simple yet refined dishes of Southern Vietnamese cuisine. Each element is wrapped just enough in a thin rice paper sheet, where individual flavors remain distinct yet come together in harmony. At HAP, the rolls flow with seasonal greens in the Netherlands and slices of vegan patties, served with a sweet-and-sour, lightly spicy dipping sauce.

Kẹp

Tofu clip vietnamese coriander  is a street-food icon of Southern Vietnam. The tofu is pan-seared and gently steamed, creating a contrast between softness and aroma, mild richness and subtle heat, brought together by fragrant herbs. At HAP, vegan patties replace traditional fillings, evoking a sense of home for Vietnamese living abroad.

Rang

Cơm rang - Fried rice reflects the flexibility and creativity of the Vietnamese kitchen. From what is already at hand, a new dish is created — flavorful, comforting, and familiar. At HAP, the rice is stir-fried with generous amounts of seasonal vegetables and, of course vegan patties.

Bún nước tương - Rice noodle salad with soya sauce recall simple shared meals, where people gather and pick up each bite together. Without complexity, the dish highlights lightness and clarity of flavor. A slow and comforting meal, completed with vegan patties and seasonal vegetables.

Vietnamese cuisine is rich and diverse in many aspects. Flavors are carefully selected to celebrate the freshness of vegetables, guided by seasonal produce in the Netherlands. Vietnamese food is believed to retain its essence even when prepared with seasonal Dutch vegetables.
