Begins with a simple question: can Vietnamese food remain Vietnamese when cooked with seasonal vegetables in the Netherlands? The answer lies in handcrafted vegan patties made from soy and wheat gluten, seasoned just enough to blend into the dish, serving as a foundation rather than the focal point.

Rather than replicating Vietnamese ingredients, each dish is built around local seasonal produce, where the balance, freshness, and lightness of Vietnamese cuisine are preserved, even as they adapt to a local context.
HAP
INTRODUCES FOUR VEGAN PATTIES
Dill flavor
Fresh and green, with a light herbal aroma. Dill offers a clean and cooling sensation, often reminiscent of spring and early summer, and pairs naturally with seasonal greens.

Seaweed flavor
Soft ocean flavors with a delicate layer of umami. Inspired by Vietnamese summers, seaweed brings a gentle taste of the sea that feels balanced and never heavy.

Lemongrass flavor
Refreshing and calming, defined by a clean citrus scent. Lemongrass adds brightness and clarity, making it a natural choice for light and vibrant dishes.

Five-Spices flavor
Warm and aromatic, layered with star anise, cinnamon, cloves, fennel seeds, and Sichuan pepper. A deeper flavor profile that evokes comfort and the fullness of cooler seasons.


By working with seasonal vegetables in the Netherlands, HAP creates a slow dialogue between place and tradition. Vietnamese flavors remain clearly present, even when expressed through local ingredients.

She is a new Rotterdamer. As a Vietnamese artist, her relationship with creativity extends beyond fine art and naturally finds its way into food. For Hip, eating is not simply about being full, but about engaging all the senses — a moment where curiosity, pleasure, and attention come together.

Rooted in a deep pride for Vietnamese cuisine and driven by continuous experimentation, Hip began crafting vegan patties and weaving them into Vietnamese dishes at HAP. These patties are not meant to replace tradition, but to quietly support it — allowing familiar flavors to take on new forms while remaining true to their essence.
